Islay (pronounced eye-la) is an island off the Scottish mainland that specializes in producing peated single malt Scotch whiskies. The island has a long history and ancient structures that date back to the Bronze Age still exist in places. Land has been disputed through the centuries from the kingdoms of Norway, England, and within Scotland itself, there have been long, embattled periods between clans. Today, in a time of peace and tranquility, this picturesque island is home to small communities sustained with farming, fishing and of course, whisky (in Scotland, always spelled without the “e”). 
 
Islay Scotch is (for the most part) characterized by smokey flavors. These flavors come about when the barley has been roasted over peat prior to fermenting, and the water used may also come from sources heavy in peaty soil.
