Vin Santo del Chianti is the title given to wines produced in the appassimento (raisinated) method within the Chianti region of Tuscany, Italy. The wines correspond with the subzone breakdown of the entire Chianti appellation, including most Classico, Colli Fiorentini, Rufina, Colli Senesi, Colli Aretini, Colline Pisane, Montalbano and Montespertoli. Their production dates back to at least the Middle Ages.

The most common Vin Santos are amber-colored and produced from Trebbiano, Malvasia Blanco and sometimes smaller percentages of Grechetto. The reds are known as Occhio del Pernice (the Eye of the Pigeon, referring to its dark pink color) and produced from a minimum 50% Sangiovese. They are most commonly sweet (amabile), though some dry (secco) versions exist.

The most authentic wines are produced using a very intricate method that results in a slightly oxidized, nutty wine with flavors of dried figs, raisins and toffee. They most often have a vintage declaration, but are Read more »

    Snoothrank:

Yellow gold color in the glass with aromas of roasted nuts, caramel and a bit of nail polish remover. On the palate this was rich and thick but not too much going on beyond the nuttiness and well balanced acid to sweetness. This does have a good structure and so I'm hoping that time will unlock more secondary flavors. I wont touch another bottle... Read More

In the mouth this is elegant and very refined with big, black cherry fruit thats tight and wound up. There are lovely, nuanced notes of sandalwood, dried... Read More
