Vin Santo del Chianti Classico is the appellation given to wine produced in the appassimento (raisinated) method within the Classico subzone of Chianti in Tuscany, Italy. The production of Vin Santo dates back to at least the Middle Ages, with many theories as to why the name “Saint Wine” has stuck for so long. 

The Vin Santos produced in the Classico zone are the same as those for Vin Santo del Chianti, but with grapes grown in the specific vineyards of the Classico area, which corresponds with those for the table wines. Essentially, this is considered the original (classic) vineyard area, as well as those vineyards considered to grow the highest quality fruit, with more restrictive grape yields than those for the rest of Chianti.
