Marcillac is an appellation created in 1990 for red and rose wines  from 11 communes to the north-west of the small town of Rodez [60 miles north-east of the City of Toulouse ] in the Aveyron district. It is a small appellation with only 200 hectares under vine and only 54 producers. Over half the total production is accounted for by the Vignerons du Vallon co-operativer. [ www.vigneronsduvallon.com ]Wine making here was originally developed in earl;y medieval times under the auspices of the Abbey of Conques. Appellation rules dictate that wines must be at least 80% mansois,a local name for fer servadou. Most of the vines are on south facing slopes and a red clay and limestone soil called 'rougiers '
