Rivesaltes Ambre is an appellation given to a specific vin doux naturels produced within Rivesaltes in the Rousillon region in France. Rivesaltes is the largest sweet appellation in the country and comes in several styles. The wines are produced using the mutage method developed by 13th century physician Arnaud de Villeneuve that adds spirit to fermenting grapes to halt fermentation and preserve their natural sweetness.

Rivesaltes Ambre is made with Grenache Blanc, Grenache Gris, Maccabeu and Tourbat (Torbato) comprising the majority of the blend and up to 20% Muscat Blanc à Petit Grains and Muscat d’Alexandrie (Muscat à Gros Grains). They must be aged two years with exposure to air for oxidization, much in the way of some sherries and Madeira. These are caramelized wines with sweet fruit nutty aromas and flavors and some residual acidity.
