Limoux is a town in the Pyrenean foothills. It is part of the Languedoc, but the terroir and the wines it produces are unlike any others in the region. Limoux is much cooler than nearby regions because of the extremely high elevation of the vineyards and the influence of the Atlantic. The ability of this climate to produce refreshing wines with bright acidity has led its residents to specialize in Blanquette de Limoux, the local sparkling wine. Some even claim that it was here, not in Champagne, that secondary fermentation in bottle was first practiced. The main grape variety is Mauzac, with a bit of Chardonnay and Chenin Blanc.

These sparkling wines are unique and a bit rustic -- lovely if one wants to try something different. Cremant de Limoux denotes a more polished style.

A little red, still Limoux is also made, with Merlot as the dominant grape variety.
