Chardonnay is a simple blank canvas of a grape, and one has to train it to taste a certain way. It easily absorbs flavors from its soils and surrounding conditions. It obeys commands. It reacts to its diet: when overfed, it gets fat. When starved, it can be too skinny and weak. It’s submissive and compliant, doing what it’s told. When treated with care and attention, it’s happy and exuberant, rewarding with flavors and complexity. 
 
White Burgundy has been referred to as the “original Chardonnay,” before the New World style of heavier body and excessive oak treatment. In Burgundy, Chardonnay has many expressions, and can even be found in this heavier, modern style. While there are exceptions, typically each region within Burgundy has its own personality, which is often dictated by terroir and climate.
