A great wine quite complex. initially pepper on the palate, later dark cherry, very well rounded tanins. Opens up more after 30 minutes. Ready to drink but it will improve for a few more years...
But what about the temperature?

In chianti classico I like http://www.enotecadifonterutoli.it/index.php?Id=1&Lingua=ing It depends on how far you are going Montalcino is quite a bit south and the Maremma is quite a ways...
