Dry, but with strong smells of honey and bees wax when first opened. Taste of honey, wax and parchment evident, as well as "sugar-less pineapple". Honey becoming less dominant as the wine breathes, with preserved pear and slighly darker notes becoming evident. Beautiful with goat's cheese.

Nose: raspberry, earthy, citrussy, CO2. Palate: raspberry, quite earthy, citrussy acid, black cherry, Sharp, fresh acidity. Firm drying tannins on end, maybe some bitterness (though not unpleasant, complexing). Slightly spritzy (secondary ferment may have started in the bottle). Medium to light bodied. An interesting example of 'natural' winemaking from the Jura.

Nose: cherry, spice. Some candied cherry notes. Some grassiness emerging with air? Palate: cherry, spice. Ripe, rich fruit. Firm, dry tannins. Good fresh acidity, quite lively. A little short on the palate, and a bit one-dimensional - good but not great.
