Good fresh acidity, firm but silky tannins. Needs air, though: when first opened was very muted on the palate with overbearing acid and harsh tannins.

Added Apr 19, 2009 at 7:43amDry, but with strong smells of honey and bees wax when first opened. Taste of honey, wax and parchment evident, as well as "sugar-less pineapple". Honey becoming less dominant as the wine breathes, with preserved pear and slighly darker notes becoming evident. Beautiful with goat's cheese.

Firm drying tannins on end, maybe some bitterness (though not unpleasant, complexing). Slightly spritzy (secondary ferment may have started in the bottle). Medium to light bodied. An interesting example of 'natural' winemaking from the Jura.
