Caymus has crafted an elegant and potent cabernet that I reluctantly drank in the absence of food. This turned out to be the antithesis of a mistake...my mouth was delighted. Herbaceous notes from the boquet showered me with Thai basil, green and black teas and a little juniper. With proper oxygenation, it then evolved to a beautiful nose of maple syrup and caramel with subtle hints of fruit starting to surface. Upon finishing my glass I could taste boysenberry and molasses simultaneously. A true expression of wine as a living entity that resurrects upon opening. At 15.4% alcohol, this wine's legs are wearing stilettoes. Drink at 62-64 degrees and enjoy with cocoa powdered steak right off the grill. I will next time. Immense.

This is not a grappa for the novice! Intense and well structured, it satisfies the palette with notes of espresso and bittersweet chocolate supported by a backbone of 50% alcohol. Enjoy specifically with chocolate cannoli or sip on its own and visualize the cannoli in front of you anyway...it won't be a stretch of the imagination. Graduates of this bottle will swoon over Nardini's Acquavite Riserva, a stupendous grappa with inexplicable complexity derived from 15 years aging in Slovenian oak. A masterpeice.

This is an expressive and versatile Cannanou with just the right amount of depth to pair with local cuisine. I find real compliments to this unique varietal with sheep's milk cheeses, balsamic vinegar (even as a reduction) and game. A rustic yet elegant surprise that deviates far from traditional grenache and wonderful for drinking now at five years old. Do keep it at cellar temperature however.
