Introduced to me via a local cheesemonger's tasting event, this Chablis sings "terroir". Light nose, mineral essence, undertones of persimmon, and a smooth, consistent mouth feel enable this to be the *perfect* oyster wine. Aim for simple with your oyster preparation, by the way. Raw or roasted are best, avoid all the crazy toppings or other camouflage to achieve the most masterful pairing experience.

Paired with, of all things, a mild, high-quality pepperoni surrounding a touch of fresh mozzarella cheese, this wine was a revelation. Juicy, well structured, balanced, a perfect complement. Highly recommended pairing.

This is a charmer of a bottle. The cork is held in place by wax-sealed rope rather than the traditional foil. The cork itself is of surprisingly high quality, but enough about the clever packaging...A deep ruby velvet in color, with legs pointing to a higher alcohol content. An inviting nose of warm berries and earth, it beckons you to taste it.Once you do, this wine is lush on the fore palate and provides consistent body throughout. This is a masterfully executed Dolcetto grape wine, complex with terroir. Ripe berry and velvet meet a touch of mineral, a highly accessible and drinkable bottle.

Hillinger Secco 2007
This barely pink, dry, tiny bubbled-Pinot Noir sparkling Rose offers hints of ripe strawberry. Midway through the palate is the sensation of yeasty bread dough with a touch of granite, and a loooooooong finish.I bought this because my preferred sparkling Rose, Graham Beck 2006, was not immediately available. This substitute bottle filled the craving for bubbly. I did not find it compelling enough to become a regular in my cellar rotation, but would be a pleasant "wedding toast" wine.

Graham Beck Brut 2006
OK, shocking. Both to my sensibilities and what I thought were my preferences. A sparkling wine? A Rose? Me? I'm a "Big Red" kind of gal, Spain and Italy my preferred regions. For the sake of everyone's sanity, perhaps I should leave the identity crisis for another post and just jump straight to the wine... A pale pink salmon with the obligatory pinprick bubbles, this one is a beaut to behold in the flute. Get ready to enjoy a quintessential summer wine, a palate full of ripe summer fruit including strawberry and ripe apricot. Slightly dry and fully balanced, it offers a long-yet-light finish, leaving you craving the next taste. This is summer in a glass, a warm weather treat for your eye and your palate.I'm still stunned I adore this.
