    ChefShaya's Review:

This is truly delicious. It even held up the next day (after pumping out the air and keeping in the refrigerator). At first sniff, it reminds me of being in an old library with the windows opened and a fresh spring breeze, and then, at the end, just when you're not sure, a hint of something sweet, like a freshly opened jar of maraschino cherries or freshly licked red lollipop. The taste is velvety soft, and a little smokey-spice lightly scratching the back of your throat, like someone lightly brushing their finger nails against your skin. As the wine settles on your palate and the aroma makes its way into your nasal cavity, a blast of sweet strawberry syrup with a faint whisper of plum jam. This is SUCH a fun wine!!!

    ChefShaya's Review:

Velvetty finish, with a medium body and light stone fruit flavors, with the most noticeable being maraschino cherry. Simple in its elegance. I'd pair this with a nice roasted salmon or roasted chicken.

    ChefShaya's Review:

Delicious! Berry, fruity, floral aroma! Luscious deep purple in color. Well rounded, with a slight tannin finish that slowly softens on the palate. Very drinkable!

    ChefShaya's Review:

This was a powerhouse wine from the minute I uncorked it. It was a symphony of complex flavors and textures, which evolved as you continued to drink it. It went amazingly well with a stinker of an aged sheep's milk cheese, but was just as drinkable alone. Rich flavors, velvety textures - delicious and well rounded.

    ChefShaya's Review:

First of all, the color is a deep lush garnet red, almost black. The aroma is earthy and leathery. However, the flavor has just a tiny sweet lining, with an intense dark berry flavor - like black cherry and black berries, then ends off with a smokey whisper. This is a seriously intense and punched-in-the-face-with-flavor wine. To be eaten with bold and flavorful foods only.

    ChefShaya's Review:

I'm finding this Sancerre to be clean and crisp, with a distinctly citrusy, orangey-lemonade iced tea flavor. Very drinkable on its own, but is pairing wonderfully well with roasted chicken and garden salad with a creamy mustard-thyme dressing. Medium bodied. Delicious! Would definitely buy more of this!

    ChefShaya's Review:

I found this wine to be a great powerhouse of flavor. Slightly astringent in the finish, but overall deep and complex flavors.....plummy and jammy. I would pair it with hearty roasted meats or even aged steak. Can definitely hold up against bright and bold flavors.

    ChefShaya's Review:

Powerhouse wine!! Absolutely delicious. Deep dark stone fruit notes, buffeted by aromas of freshly turned earth and moist bark. Black cherry flavors tickle the tongue with a hint of cinnamon-spice in the back of the palate.A marvelous wine that I would pair with a nice steak or duck. Delicious!!

    ChefShaya's Review:

I had the pleasure of ordering this bottle twice at NYC's Otto restaurant, owned by Mario Batali (who's notorious for his personal [excessive] wine drinking habits and very extensive wine lists). This bottle of wine goes with almost ANYTHING. It went deliciously well with the 2 pasta dishes as well as the pizzas - it compliments the cheeses, the sauces, the meats all in one harmonious balance that is so rare to find accomplished so variably and well. Texturally I would describe it as chewy - nice dry bite, great body but not overwhelming. It is both wonderful as a drinking wine as well as paired with food. Top notes of stone fruit and berries with wonderful candy flavors - I had a distinct memory of those 80's style red lollipop candies. As the evening progressed, the wine developed more complex flavors reminiscent of the fall....truly a wonderful experience!

    ChefShaya's Review:

I first had this as a wine pairing over a year ago at L'Ecole in Manhattan. I was surprised at this wonderful wine - buttery and caramelly flavors, rich and velvetty in the mouth. It pairs with almost anything, but goes particularly well with fatty fish dishes, indian food, and chinese food. Wonderful with fruit and cheese as well! I adore this wine and buy it by the case when I can!
