Calamus

Mostly I enjoy red wine, especially family owned chateaux of Juridiction Saint Emilion and Pomerol. In the cellar, though, there is a bit of everything. It is important for me to support Ontario wines.

Ruby red. Initially, ash, tannins, soil, bark, black pepper, cassis, dark chocolate, and roasted coffee bean. On the finish, spicy and warm with a hint of red cherry.

This wine is burgundy in colour with a plumy black fruit bouquet. It is most likely a blend from primarily Saint Emilion and maybe some other Bordeaux regions. Smoky maple syrup, a bit of leather, black fruit, pepper, and tannins are the flavours that dominate this young wine. We enjoyed with filet mignon topped with two year old cheddar and Saint Emilion wine rock salt with mushrooms. Caudalie is a good 40 seconds or more.

A hint of the forest, sour white cherry with some warm alcohol punching it up. After dinner sipping and enjoying it.

The peppery aroma is the first thing we noticed as the cork was removed. Pepper, clove, currant, plum, Braeburn apple, gives this wine some bite. It is a warm wine that is quite smooth. Perfect for a cold night.

Gorgeous dark red almost purple. Did not let it breathe long enough before tasting. Plum, pepper, cassis, and a bit of leather on the nose. Tannin forward and on the finish with a warm and spicy long finish. Would pair well with lamb or duck poutine, but i'll just sip away.
