Macmurray Ranch Pinot Noir 2004

Winemaker's Notes:

Cherished aromas of black fruit, cinnamon and spice are complimented with concentrated flavors of ripe strawberry, cherry, raspberry and truffles. This Pinot Noir offers finesse and elegance accented with pronounced structure, earthy and tannic, in a traditional style. A silky texture of sweet oak, vanilla and chocolate are expressive of a well balanced wine with a long and lingering finish.

Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Winemaker's Notes The fruit was carefully handled and gravity assisted with a target of 95% whole berries. Cold soaking occurred for approximately five to seven days to bring out the beautiful deep ruby color before primary fermentation began with a mix of Natural and select Burgundian yeasts. We punch down by hand in small (1-3.5 ton) open top fermenters. We were careful to keep each block separated during fermentation to allow for optimal “terroir” notes. Upon completion of Primary fermentation the cuveé was gravity drained into French Oak Barrels and the remaining must finished by way of gentle Burgundian handling through a basket press. We used approximately 70% New French oak with 30% one and two year old Barrels. In the barrel cellar the wine was topped once per month prior to bottling. -Winemaker-Susan Doyle Tasting Notes Some of the world’s best quality wines are reputed to result from a mixing of suitable clones. The Winemaker’s Block Selection represents classic Russian River Valley styled Pinot Noir- distinguished, yet big and voluptuous on the palette.
