La Face Cachée de la Pomme Neige Ice Cider 2004
Produced since 1994, Neige apple ice wine is produced through natural cryoconcentration. Offering the perfect balance of sugar and acidity, Neige is characterized by a rich amber color and a distinctive fresh apple flavor with a vanilla finish. Although ready for immediate consumption, Neige can be aged and savored for several years. Served cold (6°C), it is a perfect aperitif or accompaniment to cheeses with a slightly nutty flavor. Sugar at harvest: 380 g/l Residual sugar: 165 g/l 12% alc./vol.
Aged in oak casks this apple ice wine has beautiful notes of vanilla. Didnt seem vastly different from the Neige, which is $5 cheaper though.
appearance: clear bright of medium intensity golden color with luscious legs at the bowl nose: clean with medium (+) intensity, developping. aromas of apple skins, orange blossom, honey, with medicinal characteristics reminding one of a spirit rather than a sweet wine palate: sweet with medium acidity and medium alcohol level. a medium (-) body with medium (+) intensity of orange blossom, honey, apricot, ripe apple, pinapples. a complex, fresh, and luscious palate with a long finish and watery freshness that calls for another sip. conclusion: good: a fine balance between acidity, flavours, and alcohol level. a very refreshing wine which shows smoothness and complexity of flavours. a very surprising discovery considering that it is made from frozen apples and not from grapes. definitely to look for.
