It has been produced since the 17th century, named after its creator, Benedictine monk Dom Pierre Pérignon, who some say is the “Father of Champagne.” It was first produced commercially in 1936. The wines are only available from certain vintages and are highly coveted. The Chef de Cave is Richard Geoffrey, a former physician who began his wine career as the technical advisor for Domaine Chandon in Napa Valley, CA. Dom Pèrignon is all about finesse and delicacy - the finesse of the fine, persistent effervescence that never intrudes but provides a sense of vibrancy; the delicacy to flavors so perfectly integrated into a lovely creaminess. A fresh, young vintage, you can enjoy the '88 right now, or safely rely on the balanace to hold the wine as it develops complexity with age.

Complex and true to the essential nature of Champagne. Layers of toast and fruit in an aroma that's rich, yet edgy as gunflint. Very clean, with complexity based on a layered, pear-like character and toast. Exceptional balance and creamy length of flavor that fades to a whisper and lasts. Lovely, delicate style, effortless and elegant.

Dom Pérignon, the first dry prestige cuvée ever created (back in 1921), is still the standard by which other prestige cuvées are measured. From vintage to vintage the Dom is amazingly consistent in its excellence. the 1990 is a classy, elegant, complex, full-bodied Champagne, richly flavored and creamy, but so very young. If you are fortunate enough to own the 1990 DP, save it for the Millennium. A great Champagne.

Year in and year out, Dom Pérignon remains a standout among prestige cuvée champagnes. The 1990 vintage is sheer elegance and class; a complex, full-bodied beauty that's still a baby. If you have the patience, save this stunner. It will develop even further.
