At the beginning of 2002 there was a vision: The production of excellent vines. Only a few varietals and a small amount in favour of outstanding quality. Now it is a medium sized winery with 14 hectars in the Viennese wineyards of Nussdorf, Grinzing, Heiligenstadt, Neustift and Obersievering and approximatly one hectar can be found in the Kremstal nearby the Wachau. Up until the construction of his new winemaking facility on Grinzinger Straße 86, Stefan Hajszan produced his wines in a cellar in the Wachau. With respect to the wine production facilities, all of the most modern technologies are at hand in the new winery. The classic white wines are matured in stainless steel. The single vineyard wines are fermented in small and large oak barrels or in stainless steel containers, depending on the variety. Since 2006 Stefan Hajszan is using a bio-dynamic approach - a form of organic farming which relies only on "natural" techniques. The wines grow in humus soil, improved with mineral- and animal derived preperation in very small quantities (similar to the principal of homeopathy) and herb teas. No artifical pesticides, herbicides and fungicides are used. It is also associated with practices such as overwintering manure in cow horns or timing procedures with the phase of moon. While this sounds ecologically responsible but somewhat lofty, the reasons for more vintners going biodynamic have to do with the fact that the biodynamic method really brings out the terroir of a wine. It's probably one of the most interesting wines I have ever encountered. A nuanced, biodynamic Viennese field blend of eleven varieties. Delicate complexity that slowly unfolds: white pepper, quince, dried apricot, herbs, stones, preserved lemon, soft vanilla and some strawberry juice. Also, if in Vienna, do visit the winery's restaurant.
