Winemaker's Notes:

This elusive Rhone style blend is hard to find, so if you do spot it, apprehend immediately! We recommend you pass the word on to others and we promise you wont regret getting your hands on it!Tasting Notes:Beautiful deep plum color, with garnet highlights. On the nose, it explodes with notes of ripe stonefruits, Chambord, dark chocolate, spice and violets. Velvety fruit flavors of black plums lead the entry onto the palate, which is further layered with hints of figs, black cherries, licorice, vanilla and spice. Long and textured tannins from this mountain-grown fruit frame an endless finish.Technical Notes:Varietal Composition:41% Syrah, 37% Mouvedre & 22% GrenacheAppellation:El DoradoBarrels:25% new French oak, 75% 2 year old French Oak, aged 18 monthsHarvest Brix:24.9 (average)Alcohol:14.9%TA0.56pH:3.67Production:766 Cases

Our basic winemaking philosophy is to work with great grape growers to develop the best fruit in the vineyard. We pick the grapes at optimal ripeness and gently process the fruit. We are very experimental with yeast strains and use different cultures for each variety. Our whites are barrel fermented slowly and aged Sur Lies in small French Oak barrels. With our reds, skin contact is optimized by the use of small open top fermentors, hand punch downs and extended maceration before pressing. Our belief in the use of older French Oak barrels allows the varietal fruit of our wines to be expressed. We are committed to experimenting and learning new winemaking methods while preserving an old world approach. Read less
