Villa Cafaggio Chianti Classico 2009
Chianti Classico is located in the heart of central Italy’s Tuscany region, which is considered one of the most stunning landscapes in the world. This DOCG zone sits at the center of the Chianti region, and the Classico area was first integrated into Chianti’s DOCG in 1984 and awarded its own classification in 1996. DOCG means Denominazione di Origine Controllata e Garantita. Wine producers meeting this requirement have followed the strictest regulations possible to make the wine. It passes an evaluation from a tasting committee for its purest quality before it is bottled. Currently, there are only a handful of Italian wines that qualify for DOCG status. The Tuscany region is known for some of the world’s most famous and highly respected wines. And, with its artistic, intellectual, and cultural development it is most renown. The grapes of this Chianti Classico Villa Cafaggio are de-stemmed and pressed gently from 15-year old vines to create the least damage to the skin. Fermentation takes place in stainless steel tanks at a temperature not to exceed 30° C. Frequent pumping occurs for optimal extraction of color and polyphenols. Pectolytic enzymes are often added to increase the color and extraction of tannin. The wine remains in contact with the skins for 15-20 days before being racked. The Chianti Classico is aged for 12 months in Slavonian oak barrels.
