From a modest beginning of 1,000 cases in 1978, the winery has grown steadily until reaching its present size of 32,000 cases of Cabernet Sauvignon, Merlot, Chardonnay, Sangiovese and Syrah. Today Shafer wines are available in major markets nationwide and in many foreign markets.

Since 1991, Shafer's Hillside Select Cabernet Sauvignon has unquestionably been one of the top dozen or so California Cabernets. Made from 100% Cabernet Sauvignon and aged 32 months in 100% French oak casks (the majority Taransaud), it possesses the elegance and finesse one would expect from the Stag's Leap area, but also monumental power, richness, and intensity.
The release of every '99 has been a cause to celebrate, and now, after nearly four years, comes Shafer's Hillside Select. It is, in one word, a masterpiece. If you're an intensity freak, it will knock you out with its laser focus of black currant and black cherry fruit, easily able to withstand the heavy overlay of 100% new French oak that seasons it with vanilla and smoke. For all that richness, this is a wine of exquisite balance and subtlety. If it excites it also intrigues and entices. This Cabernet will go down in the annals as a classic.
A big, rich, bold and expansive style, with tiers of dense currant, mineral, earth, black cherry, anise and cedary oak flavors that are intense and concentrated, with the tannins showing a raw edge. Young and rambunctious. Needs lots of air or a little time in the cellar. Best from 2008 through 2013.
Good full medium ruby. Roasted, liqueur-like nose displays the warmth of the vintage. Massive, broad and very ripe but less delineated and taut than the 2003. Intensely flavored but doesn't yet come alive. The reticent flavors of blackcurrant and mint come across as rather disjointed today. Finishes with somewhat aggressive tannins. Slated for bottling in May, this was in an awkward stage at the time of my tasting.
Has lots of richness, depth and complexity, with layers of earthy currant, anise, black cherry and blackberry fruit, showing far more depth and ripeness than most from this vintage. Drink now through 2008.
The 1999 Cabernet Sauvignon Hillside Select is one of the finest wines of the vintage. The 14.9% alcohol is barely noticeable given the amazing concentration and intensity. A saturated opaque purple color is followed by scents of vanilla, blackberry liqueur, crushed minerals, and a hint of white flowers. There is stunning intensity, tremendous purity, full body, and a remarkable, seamless finish (amazing given the elevated, austere tannin). Give the 1999 another 2-3 years of cellaring, and enjoy it over the following two decades or longer.
An absolute joy, and a very great success for this vintage, which produced so many disappointing Cabernets. Unusually dark. Begins closed, but swirling brings out cassis and loads of smoky oak.
