Pavelot Savigny-les-Beaune Aux Guettes Premier Cru 2010

Winemaker's Notes:

92-93 points John Gilman (View From the Cellar): The 2010 Guettes is the most refined and complex wine in the lineup to this point (whether or not this is a function of its malo ending a little earlier here or a reflection of the greater elegance inherent in the terroir of Guettes I am not sure!), as the wine offers up a really lovely nose of black cherries, a touch of plum, dark berries, coffee bean, woodsmoke, gamebirds, a lovely base of soil and a dollop of new wood. On the palate the wine is deep, full-bodied and nascently complex, with a fine core of fruit, ripe tannins and a very long, focused and tangy finish. High class juice without a doubt in this vintage! 2020-2050. (Nov/Dec 2011)

Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Slow to reveal itself, but air brings out tight, dark red cherry fruit with a nice touch of blackberry on the nose. This is quite fruit driven, even a bit sweet to smell but remains fresh and very attractive. At first this appears a touch loose in the mouth though with air the wine tightens up showing a flush of sweet cranberry fruit on entry over a base stony minerality which is supported by well-integrated ripe tannins and fine acidity that balances the wine’s innate sweetness. The finish shows a dark side to the fruit, perhaps even a little black plum skin, though the mineral tension remains on the long, crisp finish. For me this is what 2010 is all about. This should be excellent in 3-5 years time. 92pts
