When owner and renowned litigator David Boies took time out from the courtroom, his love of wine and California’s North Coast drove him to create this special winery, located in the Red Hills AVA of Lake County, just north of Napa. The Red Hills are so named for the rocky red volcanic soils found there, and the grapes for this Cab are all grown in that red soil on the Hawk and Horse estate at elevations of up to 2,200 feet. The vineyard is certified organic as well as biodynamic. Boise is working with among others, winemaking veteran Dick Peterson, whose experience with the Atlas Peak winery made him the ideal choice for the mountain vineyards and volcanic soils of Hawk and Horse. This 2008 is 98% Cabernet Sauvignon and 2% Merlot. It was aged for 18 months in 50% new French oak barrels. Awarded a Gold Medal at the 2011 Tasters Guild International Wine Competition, it shows bold notes of blackberries, cedar, dark chocolate and spice on a ripe rich core. It’s a full-bodied wine with the structure and concentration to age gracefully for many years to come. Robert Whitley scored it 95 points and Tasting Panel Magazine scored it 94 points saying "We were wowed: It was love at first nosing. Dramatic aromatics of roses and cranberries are startling. While the texture begins with an indulgent plushness, it becomes dusty and mouth-smacking mid-palate. The more you sip, the blacker the fruit, and a sinewy stream of dark chocolate runs parallel to the pool of plums and ink-berries." Very Limited!

Situated at elevations of between 1,800 to 2,200 feet on sloping hillside terrain the vineyard is composed of red rocky volcanic soils studded with "Lake County Diamonds". The growing season, beginning in early February and ending from late September to early October, is marked by warm, bright sunny days and cool evenings. Fed by natural springs and some of the cleanest air in the nation, the microclimate of Hawk and Horse Vineyards possesses natural growing conditions perfectly suited to producing Cabernet Sauvignon of distinction.
