Graffigna Cabernet Sauvignon Grand Reserve 2008
To ensure optimal quality of this 100% Cabernet Sauvignon, all the grapes were picked by hand and harvesting was done in the early hours of the morning, when the temperature is cool. The grapes were then carried from the vineyards in small crates where they remained until they reached the press, in order to avoid crushing. After harvest, the Cabernet grapes were macerated in their skins at cold, controlled temperatures for a period of 20 days, allowing the juice to obtain the deep color and intense fresh fruit aromas that is our Cabernet trademark. Following fermentation in 100% stainless steel tanks, maceration continued for another 7 days, obtaining even more aromas and structure. The wine was then aged in oak barrels (85% French Oak and 15% American Oak) for an additional 12 months where it gained complexity and elegance. Three additional months of ageing in the bottle allowed it to achieve its characteristic balance. The result is an elegant, yet powerful wine.

This is rather subdued on the nose with any earthy base of oak, some gently minty and licorice top notes and a core of plummy black fruit. Round and rather lush on entry, this grows int he mouth with flavors that are a touch simple but very true to type. Rich black currant and spicy black cherry fruits are framed nicely by well integrated wood spice. There's a finely textured bed of supporting tannins here and bright acidity that keeps this fresh and juicy. The tannins show an edge of austerity on the finish, and more of a spicy wood tone, with the acid driving a nice blueberry fruit note right through t the finale. 88pts
