Château Vari Monbazillac 2007

Member Review by VignoblesJestin:

Manuel harvest. Very soft pressing and cold settling. Fermentation in 45 hectoliters vats. During the Autumn, the conditions are optimal for the development of Botrytis Cinéréa (noble rot) which allows the concentration of sugar and flavours in the grapes. It's a fresh, fruity and pure wine with a beautiful structure. It is developing a nice aromas of exotic fruits, pear, grapefruit but also hazelnut and mint. The mouth is deep, balanced and fine. This wine is a perfect sweety wine with an exellent balance between the roundness and the acidity.

The vines of Château Vari were repurchased in 1994 by Yann Jestin, an oenologist, who immediately launched a reorganisation process of the vineyard in order to optimise the wine potentialities of the soil: progressive replanting with high density, increase in the leaf area, severe pruning of the vine, work in green, work of the ground... The estate covers 22 hectares, 20 hectares of which are currently in full production. Monbazillac AOC has an area of 13 hectares, including 6.5 hectares for the red vines, while half a hectare is intended for the production of dry white. The grounds are clayey, on limestone outcropping in some places, which gives much freshness to the wines. Read less
