Cave Spring Chardonnay 2007

External Review by Premium Wine & Spirits:

Aromas of Macintosh apple, grapefruit and gooseberry. Malolactic fermentation imparts butteriness on the nose and a creamy texture; partial barrel fermentation and aging sur lie contribute toastiness and spicy nuances. Fresh apple flavors on the attack; crisp citrus flavors emerge on the mid-palate. Acidity carries well-defined fruit and rich barrel nuances into a long, focused finish.

Showing concentration and intensity, this white relies more on fruit character, with oak m\nuances. Bright and lively, offering pear and spice flavors and finishing long. Drink now.

This wine was made from Chardonnay grapes grown along the Benchlands of the Niagara Escarpment. Oak aging lends toastiness to aromas of green apple and rounds out crisp grapefruit flavors on the palate. Buttery nuances carry into a long, smooth finish. Refreshing in its youth, it will develop richness with bottle age.

Alfalfa, pear, and tart green apple aromas show some complexity. Add to that some in-proportion vanilla and spice notes from barrel aging and good acid structure and it all comes together in a pleasant whole.
