Carpineto Chianti Classico 2008
This Chianti Classico is made from vineyards planted to a minimum of 80% Sangiovese and a maximum of 20% of Canaiolo and other red grape varietals. A highly selective harvest was carried out by hand in mid-September through mid-October. Alcoholic fermentation and maceration took place in stainless steel tanks over 10-15 days at 25-30°C. Pump-overs were performed as necessary during this time. Aged in a combination of previously-used oak barrels, stainless steel tanks and cement vats for 4-6 months. Malolactic fermentation occurred. The wine was filtered prior to bottling and then cellared an additional 4-6 months before release.
