Situated on a high plateau in the Uco Valley of Argentina’s Mendoza region, the Portillo (meaning “portal” or “gateway”) winery and vineyards are dedicated to making superb quality wines for everyday enjoyment. Harmony with nature is readily apparent in every aspect of this property, which is designed to deliver wines that capture and respect the pristine beauty of their birthplace. Portillo’s state-of-the-art winery is largely built of local materials, including stones quarried from a nearby valley. This enables the facility to better blend in with the surrounding environment. Built on three levels, each 16 feet deep, with much of the facility concealed below ground, Portillo is also notable for its employment of a gravity-flow system. This minimizes handling of grapes and helps protect the integrity of the fruit. The facility’s ingenious design, which takes careful advantage of the gentle slopes on which it is built, is thought to be unique in South America. Production Area This cabernet sauvignon was made entirely from hand-harvested grapes from select plots on our vineyard estate Finca El Portillo, located at 3,610 feet above sea level. Soils are alluvial, atop a gravel bed with good permeability and drainage. Grape Varieties 100% Cabernet Sauvignon Vinification The grapes are hand-harvested to preserve the optimum freshness of the fruit. After destemming, the grapes are transferred to stainless steel tanks, where cold maceration takes place at a temperature of 45 -50°F. Fermentation lasts for 10 to 15 days. After fermentation, the wine is racked by gravity, with no pumping, and is aged in stainless steel tanks. Dating back to 1865, the 568-acre Intriga property in Chile’s Maipo Valley is planted entirely with Cabernet Sauvignon vines ranging in age from 10 to 50 years. Alberto Antonini, one of Italy’s premier consulting winemakers, works closely with Intriga winemaker Cristian Correa on crafting this very limited production Cabernet Sauvignon. Intriga belongs to a carefully nurtured collection of vineyard properties in Chile’s premier wine regions, arising from an alliance between brothers Hernan and Eduardo Gras and their winemaking partner, Cristian Hartwig, owners of Vina MontGras in Colchagua Valley. Production Area Maipo Valley, Chile Grape Varieties 100% Cabernet Sauvignon Vinification Grapes were hand-picked during the third week in April and cold-soaked for 4 days. The juice underwent temperature-controlled fermentation with frequent pumping over, and was in contact with the skins for a total of 22 days. The resulting wine was aged in a combination of French (70%) and American (30%) oak for a period of 14 months. 75% of the barrels were new, 25% second use.
