Bodegas Salentein Pinot Noir Primus 2004

Winemaker's Notes:

Bodegas Salentein is like a Hollywood film set, writes John Downes MW. “The solemn brick monolith is set on a vast plain of vineyards in the lap of the Andes. Stainless steel glistens within the lofty circular winery, and the amphitheatre below is temperature controlled to provide the perfect scene and environment for the myriad barriques”. The Estate wines, particularly the Merlot and Cabernet Sauvignon, should be fantastic in a few years time. From twenty-five year old vines, wonderfully healthy grapes are transported to the most modern of wineries, fermented in stainless steel tanks and aged in 60% new French oak barrels. Primus Pinot is sans pares, a fine effort for the second vintage.. The wines for the Primus Pinot are sourced from vineyards more than 1200m above sea level. Light tearing of the berries and fermentation at low temperatures are the first stage of a process that includes pumping-overs and maceration to give this wine its special aroma. The fermentation takes place in new French oak vats. The racking of the lees is performed every three months. At the optimum moment, the wine is bottled unfiltered. The aroma of fresh cherries is combined with a touch of vanilla of the new oak. Smooth and creamy in the mouth, with an outstanding complexity.

The magnificent bodega, designed for both form and function in the shape of a cross, allows for customized gentle handling of the grapes, reducing the distance wine needs to be moved between winemaking steps. Each of the wings is a small winery with two levels-a ground level that houses stainless steel tanks and French wooden vats for fermentation and storage, and an underground level for aging wine in oak casks. The two levels allow wine to flow from the tanks to the barrels by a traditional gravity transfer system. The four wines converge in a circular central chamber.which resembles an amphitheater and was inspired by ancient classical temples. Read less
Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

Perhaps the vintage with the greatest color intensity. Bright red shades. After ageing in French oak barrels and bottle-ageing, this wine has developed a unique bouquet driven by very ripe red, almost black fruits. Oak is not perceived - a good sign of the wine's dominance. Amazingly ample mouth-feel. The true reflection of the valvety descriptor appears domininantly. Well-accomplished medium to high structure. Supple in the mouth, with a long finish.

Tasting Notes:

Color: Ruby red Aroma: Subtle aromas of dried cherries, roasted almonds, vanilla and a touch of tobacco Taste: Lush and powerful, this well-structured wine reveals the perfect balance of its soft and sweet tannins. The pure pleasure of this Pinot is experienced through its long finish.

Bodegas Salentein is a wine destination like no other. Established in the late 1990s, Salentein is a privately-owned estate of almost 5,000 acres, of which 1,124 acres are planted to vine. The property includes a world-class winery and cellars, a 125-acre nature preserve, the showpiece Killka Center for Culture and the Arts, a nearby lodge (the Posada Salentein, offering an elegant and relaxed retreat into nature), and the landmark Chapel of Gratitude, a non-denominational chapel of ascetic loveliness, built using ancient local stonework techniques.
