Lignum Red is produced from a selection of old vines grown on the hillside vineyards of Penedes. As a result of the high altitude (1,200 feet above sea level), dry soil, and organic farming methods, the roots must burrow deep below the surface to survive. The resulting wine contains rich, complex fruit flavors. After seven days of temperature-controlled fermentation and eighteen days of maceration, the wine is placed into American oak barriques where it ages for six months. It is released after resting in the bottle for six additional months. The wine is ready to drink upon release but can be cellared for an additional three to five years. - Winery
