Wine Harlot's Caprese Salad

Pair with a dry rose

 


Caprese Salad is so simple that it doesn't really need a recipe, but arguably it's the most delicious salad ever created. The key with the Caprese is everything needs to be of the most excellent for the dish to be sublime. Vine-riped tomatoes, freshly-made cheese, top quality olive oil and vinegar, and make sure sea salt and freshly cracked pepper is used. Sub-par ingredients will result in a crappy caprese. Since a cabrese salad is the height of summer cuisine, Wine Harlots love to pair caprese with a bottle of a dry rosé. 

2 lbs vine-ripened tomatoes sliced ½”
1 lbs fresh mozzarella, sliced ½”
4 oz fresh basil leaves
4 oz extra virgin olive oil
2 oz balsamic vinegar
fleur del sel or Maldon sea salt
fresh cracked pepper
 
Alternate slices of tomatoes and mozzarella, tucking basil leaves attractively between the spaces. At the time of service, drizzle the olive oil and balsamic vinegar and season liberally with sea salt and cracked pepper.
