I’ve mentioned it before but it is worth mentioning here again, the vast majority of Chardonnay I consume happens to be Chablis. While a Chablis at this price is a stretch even for me, it is a wine worth stocking in the cellar once in awhile. I really do get a lot of satisfaction from my $30 and $40 Chablis, but experiencing a really top Chablis at full maturity is an eye opening experience. Fèvre is indeed one of the almost top producers, but the beauty of this choice is that you can get their Grand Cru Les Clos for a very reasonable price. This is deft Chablis, powerful fruit yet classically mineral-driven. It’s benchmark Chablis in my book!
