ST. AGUR & BLACK CHERRY PRESERVES ON BRIOCHE by Jason Sobocinski of “The Big Cheese”
 
 
Yield 2 Sandwiches 
 
4 -1 inch thick slices of brioche or challah bread 
3 tablespoons of unsalted butter, softened 
3 tablespoons of black cherry preserves (raspberry preserves can be substituted if need be) 
6 ounces of St. Agur Blue Cheese or any creamy blue cheese 
Fresh basil and fresh cherries to garnish
 
 
Butter one side of each piece of bread equally with the 3 tablespoons of butter. 
 
In a bowl, mix together the black cherry preserves with the blue cheese until loosely incorporated.  
 
Assemble the sandwiches by spreading the preserve and cheese mixture onto the slices of brioche. 
 
In a large pan over medium heat cook the sandwiches until lightly golden brown, be careful, as brioche tends to burn quickly. Flip and repeat so that both sides are nicely browned. 
 
Allow sandwiches to rest for 3 minutes before cutting or eating. Garnish with fresh basil and fresh cherries.
