Serves 4 people
 
Ingredients
1 each~Flakey Pie Dough Round to fit a 9-inch heavy gauge skillet, preferably cast iron 
1 TB~ Dijon Mustard
1 each~Spanish Onion, sliced thin and caramelized 
2 each~Large Heirloom Tomatoes, sliced 1/4 –inch thick
To taste~ Sea Salt & Fresh Ground Black Pepper  
1 oz.~Freshly Grated Winchester Gouda Cheese 
 
Method:
Begin by pre-heating the oven to 400 degrees. Fit the pie dough to the skillet plate. Spread the Dijon to the bottom and top with the caramelized onions.
Layer the heirloom tomato slices, season well and bake for 25 minutes until the crust is golden brown. Remove from the oven, allow to rest for 15 minutes.
Grate top with the Winchester Gouda Cheese. Cut into four equal wedges and serve with crisp lettuces, basil leaves, and more tomatoes tossed in your favorite vinaigrette dressing.
