Seasonal Sipping: Pineapple, Lychee and Mango Cocktails Oh my. Is that...is that sunlight? Warmth? Why yes, yes it is! It’s Springtime! With this fantastic season officially in bloom, we have excellent cocktail ingredients just waiting to be chopped, sliced and juiced for some really delicious drinks. Fold up that fleece blanket and brush those last embers out of the fireplace—it’s time for lawn chairs, sunglasses and warm-weather cocktails!

The seasonal fruit offerings available to us in these next couple of months are pretty fantastic, and make for some really fun and exotic cocktails. Just look at our Seasonal Sipping ingredients this month: pineapple, lychee and mango! These three fruits are some of the most versatile, flavorful and easy to work with ingredients of the season. As always, you’ll want to go with the freshest fruit possible, so I recommend hitting up the local farmers market or any place where you really trust the produce, and go (lychee) nuts.

    Hm...do you absolutely need to use rice milk? What about coconut milk (lite?) to keep with the tropical theme? I would hate to have to go buy something I never use on a regular basis but the recipe looks lovely.
