Ramps are in Season While in Germany this week I was served a particularly seasonal soup: bärlauchsuppen. On first glance, and with my near zero command of the German language I thought we were going to be served Barley soup, but as soon as our host began to wax poetic about the short bärlauch season, with those tender green grasses with their garlic like essence, I knew what we were talking about.
 
Ramps, that first seasonal burst of green, a bit like leeks, with a garlic like aromas, they are a harbinger of spring, and in fact spring evidently also goes by the name Bärlauchzeit, aka Bärlauch time in Germany! The Ramps season is short here in New York, and due to our wicked winter late arriving this season, but that doesn't mean we shouldn't be prepared.

  • I just learned the English word for this divine delicacy last week! But be aware, bärlauchzeit is about to give way (because of our nonexistent winter) to spargelzeit (the white,not the green variety). If you want some wine pairings, be sure to let me know. Happy to write something up from An American-born, German-(wine) trained perspective.

    I am a huge fan of Ramps for the last 10 or so years since living on a farm outside Barrie Ont. when my Landlord dropped off a few that he had picked in the woods at the back of the property. I have since found my own secret patch, they freeze quite well but beware to pack them in very airtight containers or the whole freezer will have the bouquet. I usually cut the bulb from the green and freeze them separately. Can't wait to visit both my Ramp and Morel patches as soon as this bloody winter ends.

  • Be sure to ask permission before 'foraging'. Otherwise you may actually be trespassing and digging someone else's private ramp patch.
