Ramps are in Season
Ramps are in Season While in Germany this week I was served a particularly seasonal soup: bärlauchsuppen. On first glance, and with my near zero command of the German language I thought we were going to be served Barley soup, but as soon as our host began to wax poetic about the short bärlauch season, with those tender green grasses with their garlic like essence, I knew what we were talking about.
Ramps, that first seasonal burst of green, a bit like leeks, with a garlic like aromas, they are a harbinger of spring, and in fact spring evidently also goes by the name Bärlauchzeit, aka Bärlauch time in Germany! The Ramps season is short here in New York, and due to our wicked winter late arriving this season, but that doesn't mean we shouldn't be prepared.
