Peach Swizzle Cocktail

A delicious take on our favorite stone fruit


As August comes to a close, stone fruits are at their ripest. With fresh, sweet peaches and plums available at every market and their soft flesh starring in many dishes these late summer days, why not take some inspiration and have a peach-flavored cocktail.

Created by Chef Jared Van Camp for his restaurant's Kitchen Cocktail Program, this swizzle mixes peach with mint and ginger, and is served with shaved ice, perfect for a late August refreshment. The recipe is also made with peach preserves rather than fresh peaches, so though they are incredibly tasty this time of year, they can be enjoyed year-round.

Peach Swizzle

6 mint leaves

2 slices of peeled fresh ginger

2 oz peach preserves (passed through a food mill)

2 oz Flor de Caña Rum

Dash of Angostura Bitters
Muddle mint leaves and ginger in a Collins glass. Add peach preserves, rum and bitters. Stir with a long 'swizzle' spoon to blend everything together. Top with shaved ice and serve.
