The notion of “healthy eating” can take many forms, but the most recently, I’ve heard to reduce the use of processed foods and cut back on meat-centric menus. I don’t know if that refers primarily to red meats, but I’m going to work on that assumption here.
So what wines do you pair with that lighter, but still hearty winter fare? For inspiration I’ve looked south of the border to the spicy cuisines of Latin America, many of which are rather light yet well seasoned, making them satisfying to both the palate and the soul!
