In our next chapter of interviews with New York’s finest sommeliers and wine directors, Levi Dalton sits down with Jordan Salcito, wine director of the newly opened Crown restaurant. The restaurant is located on the Upper East Side, conveniently around the corner from the Metropolitan Museum of Art.

Levi and Jordan obviously have a great rapport, as these videos attest to, and Levi is able to tease out the working of a nascent wine director's mind here. This was filmed several months before Crown officially opened, but well after Jordan began working on assembling her list. It’s a fascinating peek and what goes into building a list.

Jordan Salcito is a long time student of food and wine hospitality. With Crown, she makes the move into full on stewardship of a wine list.

There will be no "Reserve List" at Crown. You can ask instead for wines from the Crown Jewels. Jordan discusses refining a selection of wines that is suitable for a classic American menu that generously features indulgences such as caviar and foie and is liberally seasoned with Italian flourishes.
