Equipo Navazos picks up where Lustau has left off. Specializing in securing the finest barrels of long aged sherries, they are the geek’s version of Lustau, if there could be such a thing. All of their wines are rather limited in production, so they are both a challenge to find and relatively expensive, but if you can secure a bottle of their Fino No. 35 Macharnudo you’ll be treated to one of the best Finos around. Fino is the driest of Sherries. Delicate and pale, many come off as simply lean and bracing but this example is quite aromatic and vibrant on the palate. Salty and powerful endowed with well defined flavors of fresh citrus fruits, almonds, and doughy yeast notes. This is the wine to pair with the finest Jamon!
