Grilled Portobello Sandwich

Not withstanding my refusal to call this a burger, here is another grilling season standby. I have to admit that I love grilled mushrooms. Portobellos in particular are fantastic grilled, with crispy edges from being rubbed vigorously with olive oil imbued with the flavors and scents of rosemary, garlic and black pepper.

The meaty flavors of the mushroom paired with the smoky grilled flavors and dressing make these little discs of deliciousness a great sandwich filler, topped with a touch of sheep’s milk cheese, some roasted bell peppers and perhaps a touch of black olive tapenade. Wow, that sounds good. It’s an easy dish to pair with a variety of wines. I’d look for a nice, robust rosé, something a bit funky yet fruity. While I’m not yet convinced this is a burger, there’s good reason to compare it to the classic burger requirements when wine pairing.

Mourvedre worked for the classic burger, so why not Mourvedre rosé for the Portobellowich? The wines are a bit meaty and fruity with a touch of spice. It’s a compelling pairing and one I’m looking forward to experimenting with all summer long!

    It's not summer at my house unless there's a (1L) bottle of Gruner in the fridge, waiting for us to work our way to the bottom and open another. Pratsch is another good, inexpensive one (it and Hofer are my go-tos) and it's organic. But I'll take a chilled Cotes du Ventoux or CdR with that Sausage, and a value-priced Bordeaux blend (cab-ish, but not dramatic) with my burger. I'd go a rose, even from Pinot, with the tuna, and something like a N. Rhone syrah--but the inexpensive kind from Crozes-Hermitage, or a generic Collines Rhodaniennes, with my portobello.

    Just my choices, and yours are darn good, too! Maybe I'll put them to a choice at our Monday cookout.

  • Gregory, you depict a selection of wines "that real people can afford" as "slumming." The norm on this site is to recommend wines that never appear in a market outside of a few twee urban enclaves, and rarely priced less than $30 a bottle, as desirable choices. So, your excellancy, thanks for condescending to rubes like me. We are so indebted to you for your occasional ventures into the slums.

    Sorry DJ, but that's a stretch so say the least. I've been a big proponent of affordable, findable wines though I sometimes veer off into the esoteric for balance. In the last few weeks I've reported on Chilean Carmenere, Grenache from around the world and New Zealand Pinot Noir; wines not exactly out of the mainstream.

    I also try and add some humor to what I write, occasionally using a vernacular that some people seem to take far too seriously. Much like wine.

  • I love the banter, but I really enjoy finding great deals even better. Francis Coppola's Pinot at 18.99 is a little pricey, but I find it on sale often around the 12.99 -14.99 range and get several bottles at a time when that happens. Sometimes you just have to be vigilant to find better quality wines on sale, look at the bottom shelf, check the top shelf, you would be surprised whats there. Regards.
